Ingredients:
 • 1 cup Cashew nuts 
• 1/4 cup Milk powder 
• 3/4 cup Sugar 
• 1/4 cup Water 
• 2 tbsp Water 
• Rose essence 
• Wax paper 
• Sliver vark

Method :

To begin with take 1 cup kaju in a blender pot. I am using tukada kaju. Try to remove kaju skin if any.

So that kaju katali gets uniform white color. Blend kaju into powder. Any nut contains oil. 

If you blend continuously, it creates heat and kaju will begin to release oil. So what to do is

Pulse it and then turn off. Like so. Do not blend continuously. I have blended kaju powder.

Take a small holes sieve and strain the powder through it. So that any chunks of kaju if left will be removed. After straining, add 1/4 cup milk powder and mix well. You also can use dairy whitener. Let's make sugar syrup. Take 3/4 cup sugar into a pan. Add 1/4 cup water. Just enough to dissolve the sugar. Add 2 tbsp water more. Let the sugar dissolve. Sugar is dissolved and syrup is boiling. Turn the heat to medium. Cook the syrup on medium heat for about 7-8 minutes more. We want to make a little thick 2 threaded syrup. I have cooked sugar syrup for about 7-8 minutes. Here a little thick 2 threaded syrup is already. The syrup should be nice and thick. Turn off the gas Add just 1-2 drop of rose essence. You can add cardimom powder too. Or you also can add keshar syrup. Add kaju and milk powder mixture in the syrup. Mix well. Turn on the gas again. Cook the mixture for another 2 minutes. After cooking for 2 minutes, turn off the gas. Spread the mixture a little so that it will dry quickly. Rest it for about 10 minutes.

10 minutes are over. The mixture has thickened up really good. We will knead it now. It is almost cool. Knead it really good. Do not knead longer. Just for about a minute or so until it is smooth. I have kneaded the mixture well for 2 minutes. I have taken wax paper. Put the dough on it. Let's roll it. You can keep the thickness of about 3-4 cm. Till now we have seen lot many Diwali recipes. If it settles like a ball at the bottom This means syrup is perfect. Or take in fingers, If it is nice and thick, it means syrup is perfect. I will top it up with silver vark. Where can we get vark? I have bought this vark from a sweet shop. I had to request them a lot, please give me vark.. Honestly I don't know where can we get this on other shops. But there is a sweet shop near my home. I have bought this from there. You can skip vark. I have topped it up with vark. Let's cut kaju katali. We have been seeing kaju katali always in diamond shape. Let's take it out. Right now it is too soft. It will dry up after a while. It is looking really nice. I will have to rest this kaju katali for a while. It has got nice texture. It has got nice grainy texture.
