How to make chutney of raw dates | सूखी खजूर और किशमिश की चटनी

 

Dry dates and raisin chutney.

Chutneys are made to enhance the flavour of our food

Today I'm going to make Dry dates and raisin chutney.


Lets see the ingredients required for making it

For this we'll need

Sugar - 400gm

Dry Dates (Chuare) - 100gm

Raisins - 50gm, washed and dried

Asafoetida - 1/8 tsp

Cumimn Seeds - 1 tsp

Cloves - 4, Black pepper corns - 8

Red Chilly Powder - 1 tsp

Tamarind (seedless) - 100 gm

Coriander Powder - 2tsp

Ginger - 25 gm, grated

Fenugreek Seeds - 1/2 tsp

Garam Masala Powder - 1 tsp

1/2 tsp Turmeric Powder

Cardamom Powder - 1/2 tsp

Salt - 1 1/2 tsp, adjust to taste

Oil - 2 tsp
How to make chutney of raw dates

Lets start making it


We'll wash and soak dry dates and tamarind in water for 2 hours

We have soaked them

Now remove the seeds from dry dates using a knife

Add raisins, dry dates and 2 cup of water in a pot

Boil them till they are soft

Cover it and cook on medium heat

Take the pulp out of tamarind by dissolving it in water and filter through a strainer

Tamarind plup is ready

Raisins and dry dates are done boiling

Turn off the gas and take them out into a plate, let them cool

Now cut the dry dates into small pieces

Heat oil in a stainless steel pan

Oil is heated, turn gas to low and add fenugreek seeds

Add cumin seeds, cloves and black pepper corns

I have turned the gas off

Add asafoetida

Add Coriander Powder

Turn on the gas

Masala is done, Add tamarind pulp

Add the leftover water which we used for boiling.

Add ginger

Add salt, red chilly powder and turmeric powder

Cook for 6-7 minutes, 

 now add sugar

Add garam masala powder and cardamom powder

Cook it for another 20 minutesn
now turn off the gas

It will get thicker after cooling

Turn it into a container after it cooling, you can refrigerate it for 3-4 months

Raisin and dry dates chutney is ready

It is very tasty, you can have it with puri, roti, paratha, rice, kachori as a side dish

You can add it into any chat
