Ingredients:
- 8 ounces dried chow mein noodles
- 2 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 large carrot, sliced into thin matchsticks
- 1 red bell pepper, sliced into thin strips
- 8 ounces sliced mushrooms
- 8 ounces sliced cooked chicken (optional)
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 2 green onions, sliced
Instructions:
- Cook the chow mein noodles according to the package instructions until they are al dente. Drain and set aside.
- In a large wok or frying pan, heat the vegetable oil over medium-high heat.
- Add the onion, garlic, carrot, and red bell pepper and stir-fry for 3-5 minutes until the vegetables are tender.
- Add the mushrooms, chicken (if using), soy sauce, hoisin sauce, sesame oil, sugar, and black pepper. Stir-fry for another 2-3 minutes.
- Add the cooked noodles and continue to stir-fry for another 2-3 minutes until the noodles are fully coated in the sauce and the vegetables are evenly distributed.
- Turn off the heat and stir in the green onions.
- Serve the chow mein hot, garnished with extra green onions, if desired.
