Ingredients:

  • 8 oz vermicelli noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 cup bean sprouts
  • 8 oz shrimp, peeled and deveined (or chicken or tofu)
  • 2 tablespoons oil
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt, to taste
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • Lime wedges, for serving

Instructions:

  1. Cook the vermicelli noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat the oil over medium-high heat.
